## Why we chose it

Salter Fine Cutlery sources each blade from a small semi-production company in Japan, then hand-fits it with a handle shaped and finished in their Hawaii workshop from solid native curly koa. Koa is a dense Hawaiian hardwood with no synthetic treatments disclosed; three solid brass pins and two metal mosaic pins secure it mechanically without adhesives. The 440c stainless blade gets a satin polish without chemical coatings. Blade from Japan, fully assembled in Hawaii. Every knife is a one-of-a-kind build; custom orders accepted when the shown piece is sold.
