## Why we chose it

Hitohira sources this from a blacksmith in Tosa-Kochi, Japan's traditional knife-making prefecture. The blade is Yasuki Silver #3 (Ginsan) — a high-purity stainless steel that performs like carbon steel at the edge without requiring the anti-rust oiling routine. The Nashiji hand-hammered finish creates a matte pear-skin texture that reduces food adhesion. At 62±1 HRC it holds an edge exceptionally well for a stainless steel; the 2.3mm spine tapers cleanly to the edge. Cherry wood handle with ebony ferrule, octagonal geometry. Fully natural materials throughout, 146g — light enough for fast detail work.
